Roy's Select Alaskan Catch Wild Alaskan Cold-Smoked Sockeye Salmon is a delicacy that is made by hand by a true Alaskan fisherman.

Roy and other commercial fisherman catch the wild Sockeye Salmon in the waters of Bristol Bay, Alaska, with refrigerated vessels. The fish are selected for their size and overall appearance – only the best are used. Processed on a daily basis, the salmon are blast-frozen and shipped to Roy's new processing plant in his hometown of Juneau, Alaska.

Once there, each salmon is carefully thawed as needed and filleted, then dry-brined in a 5-step process. The fillets are then smoked in 50 to 70 degrees temps for up to 18 hours. It's a recipe Roy has been perfecting for over 20 years.

After the pin bones are removed by hand, the fish is sliced, packaged and frozen.

Be sure to keep your Wild Alaskan Cold-Smoked Sockeye Salmon frozen. It will last up to a year if kept in the freezer. To eat, thaw in the refrigerator. Once the vacuum seal has been broken, the fish should be consumed within 3 days.
