Roy's Select Seafood Fettuccine
Served over fresh fettuccine, this creamy seafood sauce is hard to beat. It's a basic recipe that can easily be adjusted to your own taste and preferences. Add a green salad and warm crusty bread and you'll have a simply elegant meal.
- Fresh fettuccine
- 1/4-1/2 cup butter
- 3 medium shallots or 3 Tbls chopped red onion
- 1 or 2 cloves garlic, minced
- chopped fresh mushrooms
- 1 pint half and half
- 1/4 cup gorgonzola cheese
- 1/2 cup fresh grated parmesan cheese
- 1/8-1/4 tsp Italian Seasoning
- salt and pepper to taste
- 1 dozen bay scallops (the small ones) or seafood of your choice
- 1/2 package (2 oz.) Roy's Select Alaskan Catch, cut into small pieces
- parsley (optional)
Over medium heat, saute the shallots/onion, garlic and mushrooms in the butter. Pour in the half and half and stir gently. Add the cheeses and seasonings and stir while the sauce simmers, lowering the heat if necessary, about 10 minutes. Add the scallops and Roy's Select Alaskan Catch and continue to stir and simmer gently for another 10 minutes or until the sauce thickens and is just the way you like it.
Serve over warm pasta and garnish with a bit of parsley if desired. Enjoy!
